Fried Cajun Shrimp ala

I usually don’t run out of space on my smoker, but with family coming over for “Sunday Family Dinner” night recently, that’s exactly what happened. I wanted to serve up a delicious, light and easy to prepare appetizer while the rest of the dinner was smoking away so I brought out the old deep fryer to make some quick yet delicious shrimp using my favorite dry rub from Mangia.TV! This Cajun Shrimp Mojo from Mangia.TV is one of only a few dry rubs I use when I’m not using my own dry rub recipe! Read on for a super easy recipe for deep-frying shrimp.

Ingredients

2-3 pounds uncooked/peeled/cleaned shrimp (tails on or off – your choice)

Wet Ingredients

1 cup of buttermilk

6 TBS’s of Sriracha hot sauce

Dry Ingredients

2 cups of flour

1/4 cup of cornmeal

1 packet of Mangia.TV’s Cajun Shrimp Mojo Dry Rub

Salt and Pepper to taste (I used about 3 TBSP’s each)

First prepare your “Wet Station”. In a shallow bowl, pan or dish add the milk, buttermilk and hot sauce. Whisk together well, and set aside.

Next, prepare your “Dry Station”. In another shallow bowl, pan or dish, add your flour, cornmeal, Mangia.TV’s Dry Rub and finally the salt and pepper.

Bring your oil in a deep fryer to 375°

Dredge your peeled/cleaned shrimp (I took tails off for easy munching) in the dry pan coating all sides. Next, dredge it in the wet pan and then back in the dry pan for a 2nd dry coating. Shake off the excess and place in your fry basket. Place just enough shrimp to cover the bottom of the basket – don’t overfill the basket since they might stick together and not fry evenly. Fry at 375° for exactly two minutes. Typically I salt everything right away when you pull the basket and dump it onto a tray (lined with paper towel to absorb excess oil) but with previously adding salt to the dry mixture above, this step is unnecessary in my opinion.

Let cool for a minute and just like magic, they will disappear right before your eyes as your guests devour them. By the time the next batch is ready the first batch will easily be gone!

This recipe takes deep-fried shrimp to a whole new level. Between Mangia.TV’s Cajun Shrimp Mojo dry rub and adding a little hot sauce and spice – it will serve up some of the most delicious tasting shrimp you won’t soon forget and leave you wanting many more.

Serve it up as an appetizer, or with just about anything as a go-with!
